The capital of Champagne has many gastronomic specialties: andouillette, chaource, prunelle de Troyes (alcohol) and champagne. Below you find the restaurants, bars and other places that we have tested and recommend.

Les Halles

 

Completed in 1876, Les Halles are the work of the municipal architect Emile Bailly. It is inspired by those that Victor Baltard has created in Paris, combining iron, cast iron and glass, to build one of the largest covered markets of this type. The construction is typical of the nineteenth century. by its sober and streamlined materials and lines: eighteen cast iron columns support the immense molded vault, formed by a triple flight of roofs separated by bay windows. The stone basement supports a small wall of colored bricks in which eight large doors open. The metal frame comes from the workshops of Le Creusot. A mezzanine is added to the ensemble in 1987. On the occasion of works in the basement, archaeological excavations carried place Saint-Rémy allowed to find the traces of the former college of the Licorne, high place of the teaching troyen since the Middle Ages which occupied previously the Licorne hotel (between the current rue Gambey and the canal). It is installed in these places in 1617, on the occasion of an enlargement made possible when the Trojan humanist François Pithou, adviser of the King, and his brother Pierre, offer to the city a set of houses and their precious library. The college survives in various forms until 1854. Its half-timbered houses are demolished in 1862. The keystone of the portal Pithou is presented at the museum Vauluisant. Les Halles are today one of the favorite daily events of the Trojans: you can discover the delicacies and local products of the Aube (fruit and vegetables, andouillette, cheeses, champagne ...) or more exotic , in a warm, friendly and particularly lively on weekends. Opening: Halles open every day - big market on saturday.
